The best way to discover a city is to just wander around without being afraid of getting lost. Ofcourse the major tourist attractions are great, but to really get to know a place you have to go where the locals go and eat, shop, drink and dance. 

When you are on a glutenfree diet, that's sometimes easier said than done. You can print a list and search for adresses, but what you really want is just a good lunch after a morning in the museum or an afternoon shopping. When visiting Amsterdam, just use this  blog, and you will always find a place that serves suitable food or drinks for you nearby. No tourist traps, only hotspots were locals go.

So no matter what... Amsterdam is always a good idea

Beware that Amsterdam has no specific glutenfree restaurants, only restaurants with (naturally) glutenfree options, and therefore cross contamination can occur. Dishes, ingredients and preparation methods can change over time. Always check if a dish is suitable for your personal situation. Waiters are often young and sometimes ignorant of the requirements of a glutenfree diet, but most chefs are well informed.
